From 7 to 9 June 2026, the city of Córdoba reaffirmed its status as the international capital of quality vinegar by hosting the 2nd VINAVIN Professional Congress, sponsored by the Municipal Institute for Economic Development and Employment (IMDEEC).

Three days of meetings and in-depth discussions brought together producers, researchers and professionals from Italy, Spain, France, Hungary, Colombia and New Zealand, providing an important opportunity to exchange views on the future prospects of the premium vinegar sector.

Among the guest speakers was Gilberto Barbieri, owner of Acetaia del Cristo, who was invited to represent the excellence of Traditional Balsamic Vinegar of Modena PDO in a high-profile international setting. Of particular significance was his participation in the round-table discussion on systems for protecting designations of origin, which involved direct dialogue with the directors of the leading Spanish PDO consortia.

During the conference, Gilberto Barbieri also led a guided tasting session, explaining step by step the production method for Traditional Balsamic Vinegar of Modena PDO, from the cultivation of the grapes right through to the long ageing process in the rows of barrels stored in the attics of Modena’s vinegar cellars.

An important opportunity to promote a culture of authenticity, certified quality and the value of time – elements that make this product unique on the global gastronomic scene.
