From our organic vineyard to the harvest to the cooking of the musts, every step is done by hand to preserve the quality that has always set us apart.
Strictly following PDO specifications, we also take care of the delicate operations of picking, pouring and tamping, with an approach that combines craftsmanship and environmental care.

The Ingredients of Our Excellence: Sun, Grapes and Time

Our Traditional Balsamic Vinegar of Modena DOP is the result of a completely natural process. Only three ingredients make this wonder possible: the sun, grapes and time.

  • The sun, an inexhaustible source of energy, powers the entire farm thanks to our photovoltaic system. It is the sun that allows our organic grapes to ripen perfectly, giving them the ideal characteristics for processing into must.
  • Grapes, grown with passion in our organic vineyards, are the heart of our product. Its quality is the basis of everything.
  • Finally, time is the most precious ingredient. Each drop of our vinegar goes through a long and natural aging process, where each wait contributes to the rich and complex flavor that sets us apart.

This perfect balance between nature, tradition and innovation allows us to offer an authentic, 100% natural and unmistakable product.

The Story of Christ's Vinegar Works

Our roots lie in the history of theBarbieri Farm, which over time has been transformed into theAcetaia del Cristo thanks to the passion and vision of generations of artisans.

With the creation of the Producers’ Consortium, Eugenio Barbieri and Loris Bellei joined forces, bringing with them a priceless heritage: entire batteries of centuries-old barrels passed down through generations. This treasure has found a home in the old rural farmhouse, where the barrels still tell a story of tradition and dedication.

In 1987, Otello Bonfatti continued Loris’s work, further expanding the number of barrels. Starting in 2000, Daniele Bonfatti began to actively collaborate in production management, followed in 2003 by Gilberto Barbieri, creating a fourth generation of artisans dedicated to the art ofbalsamic vinegar.

A Big Family and a Common Vision

In 2005, with the founding of the Acetaia del Cristo Agricultural Society, our reality reached a new milestone. Today we can boast of being one of the largest vinegar producers in the world, with more than 2,000 barrels, vats and ancient pots dedicated exclusively to the production of Traditional Balsamic Vinegar of Modena PDO. Each cask, made from fine woods such as oak, cherry and chestnut, helps give our vinegar unique nuances and aromas.

Our range of aging is among the most extensive, offering our customers unparalleled variety, enriched by the diversity of woods used. This commitment allows us to preserve the cultural heritage of balsamic vinegar, once jealously guarded in the attics of Modenese families.
