The Mysterious Black Diamond

Fascinating and alluring like the mystery surrounding the stone of the same name, Acetaia del Cristo‘s Black Diamond encloses in its balsamic drops all the uniqueness of Traditional Balsamic Vinegar of Modena DOP.

The similarity with the precious black diamond arises from the desire to underline the exclusivity of this vinegar: thanks to the mysterious alchemy of centuries-old woods, this nectar, which matures and rests in Acetaia del Cristo, is the fruit of over 25 years of aging in tanks that have been active for over half a century.

Diamante Nero therefore falls into the Extra Vecchio category, which classifies Traditional Balsamic Vinegar of Modena DOP as having been aged for well over 25 years. Its age is incalculable, while the barrels in which it evolves and matures are over half a century old. These barrels have survived to this day thanks to the constant and meticulous work of our predecessors, who carefully maintained and expanded our vinegar factory, which today boasts 2,000 barrels certified solely for the production of Traditional Balsamic Vinegar of Modena DOP.

BLACK DIAMOND: THE FRUIT OF AN INDISPLUSABLE MARRIAGE

The relationship between vinegar and the barrel is like an indissoluble marriage: these ancient vessels are our historical memory, among whose fibres, now so soaked and permeated with vinegar, a great deal of industriousness still lives today.

Thus it is easy to associate the Black Diamond with a long love story: that between the man who takes care of it and the vinegar that results.

A story also tied to its name: in fact, before 2009, the year the European regulation protecting PGI balsamic vinegar came into force, this vinegar was renamed Selezione Speciale. Adapting to the regulations, we opted for a name that would distinguish it through its uniqueness: searching among precious elements, the diamond seemed the perfect symbol of preciousness and the seal of an important moment.

Diamond, in fact, as desired by the young woman awaiting the fateful proposal. Black like the color of vinegar, unique like the stone it is inspired by, metaphorically symbolizing a union. Marriage is synonymous with balsamic vinegar: it must be cared for day after day to achieve a sublime result.

An award-winning vinegar

The fabulous Diamante Nero Extra Vecchio is an intense expression of balsamic characteristics, matured and aged for a very long time. As proof of this, in 2010 this precious vinegar won first prize in the 44th Palio di Spilamberto, the year in which the “family” competition also opened its doors to traditional PDO balsamic vinegars. Judged by a panel of tasters, Diamante Nero earned the title of Best Traditional Balsamic Vinegar of Modena PDO.
