The book<\/strong> explores the origins of balsamic vinegar, arguing that it originated in Modena.<\/p>\n In this volume, Giusti investigates the origins of Balsamic Vinegar, demonstrating that it is not a product of Ferrara, having reached Modena via the House of Este, who moved there following Modena\u2019s establishment as the new capital of the Duchy of Modena and Reggio. But the vinegar, the author demonstrates, does not even originate from Reggio, as some claim, tracing it back to the Canossa family through the account of Matilda\u2019s life written by the monk Donizone. He also demonstrates that the vinegar was not an elite product, the \u2018Duke\u2019s vinegar\u2019, but rather that the Duke found it already well-established in this area. A product, therefore, that rises from the grassroots, linked to the Modena region: it was there that the Este family discovered it and subsequently brought it to fame.
