The assonance with the precious black diamond stems from the desire to emphasize the exclusivity of this vinegar: thanks to the mysterious alchemy of centuries-old woods, this nectar that matures and rests in Acetaia del Cristo is the result of well over 25 years of aging in batteries active for over half a century.

Black Diamond falls into the Extra Vecchio category which classifies Traditional Balsamic Vinegar of Modena PDO over 25 years of aging. Its age is incalculable, while the barrels in which it evolves and matures have over half a century of life. Barrels that have come down to the present day thanks to the constant and careful work of our predecessors, who carefully managed to maintain and implement our vinegar factory, arriving today to have 2,000 barrels certified solely for the production of Traditional Balsamic Vinegar of Modena PDO.

BLACK DIAMOND: FRUIT OF AN INDISSOLUBLE MARRIAGE

A relationship between the vinegar and the barrel can be assimilated to an indissoluble marriage: these ancient barrels are our historical memory, among whose fibers, now so steeped and permeated with vinegar, still live a high degree of industriousness.

Thus it is easy to assimilate the Black Diamond to a long love story: the one between the man who takes care of it and the resulting vinegar. A story also linked to its name: in fact, before 2009, the year of the entry into force of the European legislation protecting PGI balsamic vinegar, this vinegar was renamed Special Selection. By adapting to the legislation, we opted for a name that distinguished it for its uniqueness: looking for precious elements, the diamond seemed to us the right symbol of preciousness and seal of an important moment.

AN AWARD-WINNING VINEGAR

The fabulous Extra Old Black Diamond is an intense expression of balsamic characteristics, matured and aged for a very long time. As proof of this, in 2010 this precious vinegar was awarded 1st Prize in the 44th Palio di Spilamberto, the year in which the “family” competition also opened its doors to traditional dop balsamic vinegars. Evaluated by an audience of tasters, the Diamante Nero won the title of Best Traditional Balsamic Vinegar of Modena PDO.
